Are these cooking conversions accurate?

Yes. Volume conversions use exact NIST/BIPM factors, ingredient weights come from King Arthur Baking’s Ingredient Weight Chart (the US baking standard), oven temperatures follow the standard UK cooking table, and meat temperatures are the USDA/FoodSafety.gov safe minimums. Sources are cited on each tool.

Why does a cup of flour weigh differently than a cup of sugar?

Because a cup measures volume, but ingredients have different densities. A US cup of all-purpose flour is about 120 g, while a cup of granulated sugar is 198 g — which is why the grams-to-cups tool asks which ingredient you mean.

Do these handle US, metric and imperial units?

Yes — and they keep them separate, because a US cup (236.6 mL), metric cup (250 mL) and imperial units all differ. The measurement converter flags the common pitfalls, like the US vs imperial gallon and the 20 mL Australian tablespoon.
